Tamarind Ginger Pork Ribs

Easy marinade for yummy pork. I used pork spare ribs (they were on sale) but any piece of pork will do I'm sure.

1/4 c tamarind paste
1 tbsp molasses
3 tbsp honey
2 tbsp ginger (dry, if using fresh, use more to taste)
1/4 tsp allspice
1 tsp chipotle flakes ( hot chiles of any kind will do, but the chipotle adds a nice smokey flavor)
1 tsp salt
2 cloves garlic
1 tbsp coconut oil
1 c water

Mix all the ingredients over low heat and mash the tamarind paste until it is falling apart. Heat until ingredients are just blended, and the oil melted. Pour the marinade over your pork and marinate for at least 4 hrs, but longer is better.

Then pour the whole thing, marinade and all into the crock pot on low for 6-8 hrs depending on what cut of pork you are using, and how big it is.
